I am trying to figure something out...Am I snooping? Yes.

I decided to take a quick peek in my boyfriend's phone and I noticed in his settings, he has his iPhone 6 listed and then he has another iPhone 6 listed. Both have completely different serial numbers but both have the same phone number listed. Why is this? Could it be possible he has another phone somewhere that I know nothing about? Would he be able to do anything on it?

Maybe he lost one and it had to be replaced. Quit snooping on him, no one deserves that. If you really feel like you can't trust him, you shouldn't be dating him.

Have you been with him long enough that you remember him having his phone replaced under warranty? If so, it could be the old phone that failed.

If you haven't been together that long, ask him if he's ever had trouble with his phone. Use the excuse that you're thinking of getting a new phone and are seeking advice on whether iPhones are dependable.

We have together over 4 years. He has had this phone over two years. The old phone wouldn't still show listed, would it?

Yes, it will still show it.
I have 2 older phones still listed on my account.

What gives you the right to snoop around in someone's personal property like that?
If you can't find anything, you just make something up anyway. Been there done that.
Stop the witch hunt before something bad happens....jeeze!

Try asking him. If you can't trust him now, after 4 years, it probably isn't going to work out.

Yes, the old phone still shows. It shows all devices (and if the device is turned off/deactivated/broken the last known location will always show).

It's more likely he had an old one that is still listed on his Apple ID. I saw one of my old phones until I went to my Apple account and removed it. Just a guess.
