Is Ballantyne a good option for an Italian-Mexican family to move?

Probably not your best option. Try Hidden Valley neighborhood or somewhere off of Eastway or The Plaza.

Ignore the snarky responses. Some people need to grow up. Yes, you will be fine. Its 2016, Charlotte is a diverse city, with people moving there from all over. You don't need to worry about your ethnicity, but instead focus on the real issues that matter to you...commute time, schools, availability of housing in your price range, the aesthetics of the area, etc.

Hidden Valley or LaSalle Street at Beatty's Ford Road seem diverse.

Don't think it's a diversity issue. it is one of the most expensive places to live though.

You will be fine in Ballantyne, however, as previously mentioned, it is one of the more expensive areas of town. Disregard the idiots who are suggesting Hidden Valley. Charlotte is not Miami or NYC, but there is a diversity of people here.

Richard, did you recruit these race baiters from the last klan rally to post nonsense in bulk? Where are these loons coming from?

To the OP - if you're serious, Ballantyne is a fine option but it's not related to race. What are you looking for in a neighborhood?
