I'm thinking that a lot of colleges have one or more rock bands associated with them (either as students or from the college town), but only know a few:

UVA: Dave Matthews Band
UVM: Phish
LSU: Better than Ezra
UGA: REM & B52s

Anyone know of any others?

Hootie and the BLowfish formed as freshman at University of South Carolina.

I believe Widespread Panic is another Athens band, not sure if they went to UGA.

the lead singer of Weezer went to Harvard.

Tom Petty grew up in Gainesville FL and I think he is loosely associated with U. of Florida.

I always think of Steely Dan in connection with William and Mary. ("My Old School")

My Old School is actually about Bard, where Steely Dan was formed... specifically, a police raid/weed bust in the dorms there that pissed Donald Fagen off, and induced him to scathe it down in a song stating that he'd never go back there, and mocking the idea that it was considered "the William & Mary of the North."

Supposedly, Rikki Don't Lose That Number is about a faculty spouse there, as well.

Fleetwood Mac and the USC marching band. TUSK.

Also most of the original musicians from the band Chicago were music students at DePaul University.

Not Rock & Roll and not a band, but a big name that played clubs while in college:

Country:

Kenny Chesney - East TN State Univ
