My computer keeps freezing every few minutes and I have to reboot it. The disk usage is at 100% which is weird because there are only like 5 processes running with highest one being below 2 Mb/s.

Any ideas?

I've looked online and people all over are having this problem with a variety of resolutions. I've tried a couple to no avail, was wondering anyone had a better idea to pin-point the problem.

Run antivirus/malware stuff, then reboot.

Then, close one by one the 5 running processes, and check each time the %.
Let us know the result.

You likely have many more than 5 processes running. Go into task manager > performance tab > resource monitor button and take a look at the disk tab, it should tell you what is reading/writing.

Well 5 running at 1-2... the rest are only running at around 0.1.

I'm amazed that a total of 10 MB/s or less is causing it to be at 100%...

I went under System >> Troubleshooting >> and then ran trouble-shooting on Windows Update, Security, etc... I believe the Windows update one fixed it as it found some issues. Problem hasn't happened since...

How much space do you have on the disk? If it's low then it going to be writing to highly fragmented space that is left and it will slow to a crawl.

I think the confusion might (might) arise from the fact that the OP said disk usage when they really meant CPU usage.

Or did they mean disk IO? I thought that they were viewing the Disk tab in Performance and viewing 100% read / write, but ......

It does get confusing when trying to describe what's going on with computers. There are so many things to look at, then you have to explain it on a forum.
