Steak place where you can get custom portions of steaks? (houses, land)

I love Texas Roadhouse, but my wife hates it. I love it because it's the only place I know where I can get any steak there in any size I want.

For example, I have gone before and ordered a 16oz Filet Mignon, even though their menu only shows 6 and 8 oz filet. They say they can hand cut to any size I want because they cut their own steaks. Of course there is a charge for this, but I am not aware of this at other places. For example, they've never said anything like that at Texas Land & Cattle. And I've never heard of the nicer steakhouses doing this (Nick and Sams, etc).

In light of my desire to go to a place that my wife would enjoy too, can anyone name me any other steak places in the DFW metro that you could do this, i.e. where else can you order any size steak you want?

Have you looked at Pappas Bros? Not sure if they handcut to order, but it's worth a phone call.

Thanks, but I was hoping to find a place that wasn't dressy either.
