Haven't been to Amalfi but both Santorini and Dubrovnic are fabulous. Santorini more for it's natural other-worldly scenery (built on a collapsed volcano in the Med) while Dubrovnic more a fabulous old city (walled fort) and big mainland countryside of riverside restaurants, rocky but scenic beaches for swimming, etc.

I've been to Santorini and Dubrovnic. Both are beautiful, but I also give the edge to Santorini. I've only driven thru Amalfi (when picking up my car from the Naval Base near Napoli) and I should have stopped, but I had to get back to Brindisi asap.
I've been to all three. They are all very scenic, but Santorini's caldera literally took my breath away.
I have to go with Santorini, at 7 or 8 o'clock in the morning, from a cave house in Oia.
Add to the list: The Bay of Kotor, Montenegro, south of Dubrovnik. Dubrovnik is nothing compared to the spectacular fjord that is the Bay of Kotor! There's also a medieval walled city at Kotor, like Dubrovnik's. http://www.pbase.com/alangrant/montenegro2
Haha. I've never been to the Amalfi Coast or Capri or Ischia, because that would entail having to transit through Naples, which I love.
Of the list, I might say Dubrovnik. I have always wanted to go. The pictures look beautiful. I think Greece, and the Cyclades, are overrated. I've been once, and don't find it compelling enough to go back.
In Italy, it would be the Cinque Terre for me. Tri, what you forgot is the Costa Smeralda of Sardinia as an option.

I know there are others, I just wanted to compare the 3.
Hopefully I'm going to Europe next year. Anyone been on a cruise of the Med? Specifically the Eastern Med, Greek Islands, Croatia.etc. It doesn't spend much time in each island, though.
I spent 5 days along the Amalfi coast a couple of years ago. Landed at Naples and drove down to stay at Atrani.
Absolutely stunning but the coast roads a bit of an 'adventure' to drive.
I've not been to the other two so as i've been there and I know what it's like Amalfi gets my vote. I went at the end of September so was also reasonably quiet.

I've been to the Bay of Kotor in Montenegro. It was indeed magnificent, with dramatic cliffs rising up, while the sea below is dotted with tiny islands with churches on them. It was interesting to see the Italian influence, we saw the Venetian traders' winged lion. I still think the caldera of Santorini has more of a breathtaking 'wow' quality, but the beauty and history of the Bay of Kotor is definitely compelling.
This photo I took in 2006 of Sveti Đorđe Island does not really do it justice, but here it is anyway:
