It looks like my wife and I will be spending significant time in Zurich soon.

How do active people, 40+ in age, dress every day?

Is it typical for better restaurants to have a certain dress code?

You should be fine with dressing "smart casual" at fancy restaurants. No ties required. As for your outfit during the day: Put on whatever you are comfortable with. You won't see many locals with baseball caps and Nikes, though.

Just look up "Zürich Bahnhofsstrasse" at Google Images to get an idea how people dress up on typical shopping miles

Just like typical Europeans, up to the 9's in the winter, nude (even if they, especially if they are fat) in the summer.
