Check out Lake Wales. Far enough from the city to feel small but close enough to Orlando area if you need it. There are plenty of small towns all over the state. Lots of large farm areas. Besides for Orlando and Tallahassee if the city is not on the coast it is not going to be a large town.

You could probably get that fairly close to Orlando. I stayed at a rental home for a weekend in a place called Devenport Florida. It is probably about a 30min drive or so from Orlando and even closer to Disney but the area is fairly quiet. But close enough to Disney/Orlando that you can eat wherever you want, shop where ever you want and be able to get into the city etc..
My opinion on quiet may be a little different since I live in the middle of Miami but there are lots of decent options out there. Many of the towns in the list of counties I gave you are very rural and small.

Check out the Lake County towns of Mt Plymouth or Sorrento which could be a good fit for you and are still relatively close to much of the area.

If you get about an hour north of Tampa, you start to run into places like Crystal River, which seemed like a nice quaint place.

Lake County, North Seminole County (particularly along SR 46), West Volusia County (Debarry, Deland, Orange City), East Orange County (Bithlo, Christmas, Wedgefield), Northwest Orange County (Northwest Apopka, Plymouth, Sorrento), South Osceola County, and basically anything along US 27

Dade City in eastern Pasco County. About 35 miles NE of Tampa. Also the teeny town of San Antonio which I lump into the Dade City area. I guess I don't know how "small" you want, but these are very small and very, very beautiful with a lot of lush rolling hills, very rare for Florida.

St. Cloud hands down. You won't be disappointed. Just as a little history, it was founded a long time ago by former civil war Yankees who got a great deal on housing after the war. You see plenty of AMERICAN flags displayed. The East Lake Toho area is especially nice.
