My son ordered a beef rib at a BBQ restaurant here the other night. I was surprised when they said it was just one rib... but that thing was HUGE! It looked like it would be enough for dinner, plus lunch the next day.
Well - he took a big bite, and the whole rib was filled with fat! Very gristly. He ate hardly any of it, because it was so hard to find edible meat in all the fat. We saved it; I was thinking I could chop it up and pick out the fatty pieces and save the meat, but now I'm wondering something. Did they maybe cook it too quickly, so that fat didn't render well? The meat itself (when he could find it) was tender and flavorful. Could I re-bake the rib, or maybe braise it, and remove some of that fat? Or is it too late to do that?
Hash! That's what onion/potato/____meat hash is all about. Chop it up, let it render out some fat, add the onions and potatoes and much salt and pepper and you will have a beef hash. One of my favorite things.
We ordered takeout, so didn't discover it 'til we got home! The manager did say we'd have a dinner on them next time we visit.
I ended up just pulling it apart, and picking the meat out. There was some, but not as much as that huge rib promised!
That's the worst part of takeout. I don't know how many times we've gotten the food home and had something wrong with it. Sometimes I've been so mad I've driven back and made them fix it, other times, I've just lived with it. Very frustrating. I would definitely hold them to the free meal.
