I've eaten pasta sauce that has been opened for at least 2 weeks but before the "best by date" with no funny taste or noticible health effects.

On a can of pasta sauce, it says to consume within 7 days of opening... this is the first time I noticed.

Is it serious if you eat it after say 2 weeks. (Pasta sauces in general)?

Toss it! Even if not molded it's probably bad. I doubt you'd die from eating it....

What type of sauce is it? A milk based white sauce might go bad more quickly than a tomato based sauce would.

Have you covered the container with an air tight wrap or left it open to the air?

Regardless, though, when in doubt it's probably best to toss it just to be on the safe side.

We keep opened tomato based sauces in jars for a couple of weeks. We don't eat a lot of pasta or tomato sauce, so it's rare that we'd eat a whole jar in a week. Since it's mostly veggies and olive oil, not meat or milk, I've never worried about spoilage. We've done this for years and never gotten sick. After all, think how long ketchup stays in the fridge after you open it. I've never actually read the directions on a tomato sauce jar, maybe I should.

Editing--just read the Prego tomato sauce label, it said use within 14 days of opening. So I'm good. Maybe your brand has milk or meat. You didn't store it in the can, did you?

But. ketchup has vinegar in it. I've noticed not V-8 but another canned vegetable juice I buy now (much cheaper than V-8) seems to be getting bad in a tightly closed container in a week or so. Though I add lemon juice to it. Makes it hard to tell as it is a acid taste it gets. Still not sure ,,,might be my imagination. Though the bottle will release pressure at times..
Reusing same plastic jug for a period of time might contribute though I wash it thoroughly.

Good point! I'd say if the label said toss after 7 days there must be a reason.

I would toss it, but then again I would never eat jar sauce. I would make your own and freeze it.

I usually freeze what I don't use. I can get a jar of sauce and it will make 3 containers. I just take one out when I need it.
