It's definately alligator meat. I had it years ago in Florida and I thought it was chewy.

Apparently everyone knows about it but me. I asked my girlfriend why no one had told me about it sooner! lol

I found a great recipe I plan to use to make it myself:

• 1.5 cups plums
  2 tbsp vinegar
  1 tbsp dried minced onion
  1 tsp crushed red pepper flakes
  1 clove minced garlic
  1/2 tsp ground ginger
  
  Boil, stir, enjoy!
