It's definately alligator meat. I had it years ago in Florida and I thought it was chewy.

I found a great recipe I plan to use to make it myself:
  • 1.5 cups plums
    2 tbsp vinegar
    1 tbsp dried minced onion
    1 tsp crushed red pepper flakes
    1 clove minced garlic
    1/2 tsp ground ginger

    Boil, stir, enjoy!

A1 Chicago Steakhouse marinade, but I'm using it as a dipping sauce. It's peppery and zesty. And really tasty.
