I have looked back through old threads and while there are some dealing with gluten-free foods. For those of you who eat this way, what are your favorite replacement foods for wheat?

Such as pasta or breads: do you like gluten-free "pastas"? If so what brand? Any other comments about your favorites would be helpful.

Trying to eat less wheat...I love whole wheat products but they do tend to leave me with bloating, heaviness feeling, etc.

My favourite non wheat food is quinoa, you can eat it cold, hot, can turn it into a dessert, really anyway it's made I find delicious!!

We eat gluten-free, and don't really care for quinoa. We stick with the gf pastas, they're not bad, we think the corn based ones are better than the rice based ones. Coincidentally though, our favorite brand of pasta is "Quinoa"!!! It's made with corn though. I couldn't say why the brand is called that.
For other brands, it's hard to beat Pamela's Products. Check out their website.

I'm not gluten-free, but if I were, I would just do risotto and polenta in place of pasta.

When you eat a lot of gluten free product replacements you may want to check to see how they affect your insulin levels. A lot of them will spike your insulin more than sugar does.
I just had a piece of apple yogurt cake that I made with coconut flour instead of wheat flour. It's a little more work to make things from scratch instead of buying it or making it from a box but it's worth it.
As far as pasta, there really is no substitute. Some people like shiritake noodles, but they're mainly good for Asian style dishes and not Italian. I've tried using zucchini noodles, but it's still just zucchini.
