I have a neighbor whose son is in the hospital. I want to take over a few meals so she does not have to think of food when she comes home from sitting with him. What can I make that will be easy for her but can be frozen if not immediately needed?

Chicken enchiladas, with the sauce on the side, are easy to freeze if not needed.

It's hard as I would imagine she wouldn't have an appetite and might nibble at the hospital. And it's just her at home?

That's a tough one, do you know her taste? I would think some soups and crusty bread. A small cheese platter with fruits. If it were me, I would invite her over for dinner or take her out to get her mind off a bit.

I think these are great ideas - also, maybe some nice rolls and deli stuff for sandwiches? Especially if it's just her - a casserole would be too much. Maybe drop by with a pizza or chinese food or something along those lines?

I love this idea. A great soup (some for now, some to freeze or refrigerate) and fresh bread would be a comforting welcome home.

What a nice friend you are to take care of her.

Last year my hubs was hospitalized after an accident. My neighbor brought me an assortment of cheeses, cold cuts, and crackers. Not a big deli gray, but just a few slices of three different cheeses, some ham and turkey sliced.

This was easy for me to nibble on when I got home at night.

Get a box of Uncle Ben's Wild Rice ( original ) and cut up some chicken breasts
into bite sized pieces, in a fry pan add some dice up onions, celery, mushrooms
green pepper. after this set them aside and cook off the chicken. by this time
the rice should be done, add fixings and chicken. I also add salt & pepper to
taste as well as minced garlic as I'm frying the veggies.

Best of all it freezes rather well and tastes great by adding a bit of butter
before you warm it up in the microwave
