I can't use soy sauce as I'm allergic to gluten but do have some gluten free tamari.

Ideas?

well you should cook it slightly rare in the middle unless you don't like it that way. How about lemon, garlic, salt and pepper?

Use the tamari with some chopped garlic and let it marinate for an hour. Pat dry and sear or grill on high on both sides till desired doneness. Rare is good but we'll is fine though it will toughen up. Salt and pepper to taste before eating. Cook it quickly as its super lean and will dry out.

I like to make poke, ceviches Hawaiian cousin. You need super fresh ahi. Then you marinate it soy sauce, ginger, scallions, seaweed and sesame oil.

The seasonings sounds delicious. Which one of those ingredient 'cooks' the tuna?

It is more like sushi than ceviche. Here is a recipe. Hawaiian Ahi Poke | A Spicy Perspective

(Sushi grade ahi is pretty easy to find here.)

Baring making poke, you can definitely do a marinade with those seasonings and sear it. I have done that as well. Add a few chili flakes, and it is yummy!

You could adapt this recipe for tuna as well. The glaze is so yummy!

Poke is a great suggestion (just substitute the tamari for the soy sauce). You could also just make ceviche. Rick Bayless has a great recipe: Classic Ceviche Recipe - Rick Bayless | Food & Wine

Of course these recipes presume you are using sushi grade ahi!
