Signature Food: lutefisk
Soak whitefish in water for six days. Add lye, then soak for another two days. The fish now is caustic, with a pH or around 11 or 12, and will cause harm if eaten as is. As such, it must be soaked in water again for another five days. The lutefisk will now have a gelatinous consistency and is ready to be consumed. However, it is typically heated in some fashion to make it slightly less revolting.

Best place to go for lutefisk: any place that does not serve lutefisk
