The recipe said to spray the paper cupcake liners but I thoughts "That's silly" and of course Zi regretted that decision. I got 12 using my silicone cupcake liners and used 2 papers for the rest.


I don't understand. it was for carrot cake muffins and it has 1/4 cup oil so dryness is not the issue. I've never sprayed papers for blueberry muffins or any other kind of muffins.

Any clue?

I find that my muffins stick if I don't let them cool thoroughly before storing, but other than that, I have no clue.

I have a corn muffin recipe that I love, but the muffins stick to the paper too. I also discovered that if I let them cool they don't stick. So, hot messy muffins, or cool neat ones?

It's the nature of the paper used in the liners. It's always best to give it a spray. Or look for coated liners.

No these were sticking hours after cooled. I'm thinking they probably didn't stick while still warm but I didn't even try as I've never had anything stick to the paper liners. So i wrapped them in tin foil and warmed at 350 for a bit and they still stuck to the paper. arggggg.

I've never had a cupcake stick. So basically what is the difference between a muffin and a cupcake. Both have flour, oil, sugar, eggs. These muffins have 2 eggs and 2 egg whites. Egg whites are very sticky. Could that be the reason?

What is the difference in sugar if there's any? I always thought it was the sugar content that made things "stick". But I am no expert.

Use foil liner cups...never an issue. I haven't seen paper cups in forever unless it's very decorative ones for candy / bon-bon making.

I just bought four packages of plain paper liners at Safeway yesterday. I make A LOT of muffins.

I buy the sleeve of 500 paper wrappers at the restaurant supply. Muffins stick, cupcakes don't. I always spray the liners when making muffins.
