I had some of my blackened Cajun salmon I make in a cast iron skillet - was awesome as always
Have some left over and chilling in the fridge, that I will make into a nice Caesar salad this eve for dinner
Also had for lunch these toaster oven cooked shredded parmesan cheese things I invented - take alum foil and spray with non stick Pam and cook toast for about 3-4 mins until melted in a small thin cookie shape / small piles of shredded parm cheese and let them cool for about 10 mins
Kinda like eating a half crunchy half chewy cheese cookie
Management at my workplace got us Stone Fire Grill barbecue for lunch. I had some tri-tip, sliced chicken breast, garlic mashed potatoes and cheesecake. Diet Pepsi to drink.
Today for lunch I made this for my wife and and I:
- hash brown potatoes, by Simply potatoes
- egg/cheese scramble (not quite an omelet), 1 whole egg, 2 oz Egg Beaters, some grated cheddar
- 2 slices bacon, Boar's Head fully cooked
- toast, Roman Meal bread with butter
- coffee, 8 O'Clock brand
We tend to have conflicting breakfast schedules 1-3 hours apart so we each eat a bowl of cereal in the morning, then when lunch rolls around we have a sit down lunch together.
