My father would purchase this cut for our weekend pot roasts. I distinctly recall a very chewy non-meat section. Presume it is gristle(tendon/ligament?) which was a favorite among us kids because one could chew and chew and it would not breakdown.

I see stores nowadays trim away the gristle. At least they do in my Public and Winn Dixie.

Anyone recall this beasty or still see it?

It was a huge package per piece as in 12" in length by 8" in width.

i'm guessing it is this roast

the very chewy part you mentioned is nicknamed "bubble-gum" a hard yellow sinew -on the left hand side of this chuck roast
