What are you planning for Christmas Breakfast? I always make an overnight egg casserole of some sort and an overnight french toast casserole and have fresh fruit. Nice and easy to pop them in the oven. Will you have guests or be traveling? Love Christmas morning!

Nothing. No kids. No family. No big tree. Just me and DH, and we stopped giving each other gifts years ago. So Christmas morning is like any other, except maybe the dog gets a bit of the leftovers from Christmas Eve dinner.

Cake:
1/2 c shortening.
3/4 c sugar.
1 tsp vanilla.
3 eggs.
2 c flour.
1 tsp baking powder.
1 tsp baking soda

Brown sugar mixture:
6 T butter
1 cup brown sugar
2 tsp cinnamon
1 cup chopped nuts (pecans or walnuts)

Preparation: 30 minutes; Serves 10-12; Can do ahead. Can freeze.

Cream shortening, sugar, and vanilla. Add eggs, beat well. Add flour, baking powder, and soda alternatively with sour cream. Spread 1/2 of batter in a greased 10 inch tube pan or bundt pan. Cover with 1/2 brown sugar mixture. Add remaining batter, then sugar mixture. Bake at 350 degrees for 50 minutes.

This is the recipe that came from my Grandmother. I'll have to confirm with my mom, but I'm almost positive she uses butter not shortening. She's not really the crisco type. She also probably adds more like 2 cups of pecans. Bet this would also be great with walnuts.

Normal morning, at our house. Either cereal, oatmeal, a waffle, a croissant or pancakes. The dinner that night, will be special!

Christmas morning is always a bacon, egg and cheese casserole. Sometimes there's also monkey bread.

Same for us, but I still try to make it a bit special with a breakfast casserole, muffins or scones, and fruit or berries.

Besides the normal egg sandwich with bacon and/or sausage and some fruit--I like to make Ebelskivers. They are always a hit at my home.
