People, why didn't anyone tell me about the natural wonder that is Queso Fundido? I just saw a video of this dish online. It's a Mexican dish of basically melted cheese, meat and peppers. I've scouted out a local Mexican restaurant that sells this yumminess and I can't wait to try it myself.

Have any of you ever had Queso Fundido? Was it good? Tell me all about it.

Looks much like a great omlette. Not unlike many similar concoctions we make around here. Never heard of it myself. Looks great though.

It's more like a fondue/appetizer deal, no eggs in a real fundido. Fundido/fondue - Romance languages and all that. It's melted cheese yumminess as the OP stated.

Believe me, we have more than our share of cheesy goodness around here. I do miss doing fondues .

I've made a couple of versions of it a few times, although I didn't use meat. Loved them both. It's a dish that is just kind of inherently fun to eat.

What's funny is that we just got home from eating out at a Mexican restaurant and I noticed they serve queso fundido. I don't see it too often on menus.

Yeah, meat like chorizo is optional. It's not easy to find in many restaurants.
