Researchers at New Mexico State University have discovered the world’s hottest chili pepper. It's called the Bhut Jolokia, a variety originating in Assam, India.
In tests that yield Scoville heat units (SHUs), the Bhut Jolokia reached 1 million SHUs, almost double the SHUs of former hotshot Red Savina (a type of habanero pepper), which measured a mere 577,000. The result was announced today by the American Society for Horticultural Science.

Nope, I love spicy foods but not hot. Anything which masks the taste of the food is to me a pointless thing. I think a lot of people eat those as a bravado macho thing. Spicy ( ie the use of spices) is wonderful and adds a different depth and dimension to foods, hot is just hot.
I had some very hot chilli marinated scallops recently in a Thai restaurant and I might just as well have been having rubber as the delicate flavour was drowned in an unpalatable mix of discomfort. I love to be able to taste every single ingredient.
Thai food sucks, and not because of any hot Chile's. It's the rotten fish sauce ! Yuk !
Hey chielgirl try this recipe, it's a little bit hot but not too bad.
Take large canned pickled whole jalapenos and cut off stem end, core out the webbing and seeds. Shake out all the liquid and dry them off. Stuff each Chile with a chunk of jack cheese. Mix up a small batch of tempura batter, roll the stuffed peppers in the batter and fry in light olive oil until they start to brown. Drain oil from the fried chilies on a paper towel then place on plates. Pour heated chunky Mexican salsa over the rellenos and sprinkle with a little grated cheddar and a little bit of dry grated cotilla or parmesan cheese. Add a scoop of beans and Mexican style rice to the plate, then garnish plate with cilantro, green olives and a few slices of the hot carrots that come with the canned jalapenos. You're going to love it !
That may be the hottest pepper known, but Blairs has hot sauce rated at sixteen million scoville units (Blairs 16 million Reserve). I've had their Jersey Death Sauce (1 million scovilles ) and their 3AM Reserve ( 2 million scovilles ) I can honestly say both of them knocked me on my can and "I LOVE" hot sauce. I've trie Dave's Insanity! It's so hot that we add it to our salsa by using a toothpick dipped in it and then stirred around. My Dad says Thai peppers are the bomb, but I like Scotch Bonnets! Ummm, fruity and HOT!! http://bestsmileys.com/firemen/4.gif (broken link)
Try veggie Thai foods, no fish sauce, just thin soy. The taste is excellent, but not fishy. You can order Thai food mild. (I'm about to take a month long holiday there where I will eat lovely food until my heart is content)
Chile Pepper magazine had a great chile rellenos casserole in their Hot & Spicy & Meatless cookbook. Yummers.
A decade or so ago, I was really macho about peppers and heat. Now, I like heat, but in its appropriate place; in most of my dishes, I like to taste the peppers but not have them overwhelm me.
I made a batch of "Louisiana style" hot sauce at home ONCE....Tabascos cooked down with vinegar and spices...It almost ran me out of the house! Had to open all the doors and windows and turn on the fans to breathe! It was pretty intense, so make sure you have good exhaust fans!!
I love eating hot peppers, but I can't do it out in public anymore because they give me the hiccups. Does anyone else have this problem?
