Has anyone discovered any delicious but unusual spice combinations?

One day many years ago when I was actually tying to use up all my fresh herbs, I chopped up a bunch of sage, mint & basil and put it on my pasta. It was unexpectedly delicious.

Just now, I am trying out a new recipe for strawberry rice with basil, ginger and lemon juice. Wow. I never thought of using basil and ginger together, but they compliment each other really well.

Any other ideas?

Cinnamon goes great with chile powders.

I went to a restaurant once and they had this super interesting sauce for scallops with vanilla, black pepper and soy sauce.

Basil and ginger is part of the base of Thai cooking, so you may want to explore more Thai recipes.

I like making a quick Vietnamese-inspired sandwich spread of peanut butter, siracha, sweet pickled carrot slices, and cilantro. this doesn't play well with tomato slices on a sandwich though.

Enchilada sauce with chili spice mix. Combined with lentils- makes for a PERFECT thick curry!
