The first one is a truck somebody has already screwed over. The second one isn't much better. The only way to get the 7.3 in any Excursion in 2003 was in an Eddie Bauer, otherwise the diesel option was the 6.0. Sounds like the engine has been transplanted. The asking prices are absurd at best. A super clean one one around here $8-10,000 tops and most will be less than that. Diesel is far too expensive, fuel mileage sucks at best, and these engines are not rated for low sulfur fuel making injection issues a concern. The vehicle you apparently are looking for is a black swan that nobody wants. Don't pay top dollar for it.
Is there a good solution (additive) for these that will make the injection last on low-sulfur fuel?
Nether one.
A lift and towing a TT don't mix well.
and you can do better than the 2nd.
ULSF fuel is not a issue. There is more than enough lubricity right out of the pump for this truck and any other a additive is not necessary. A diesel is the correct choice ,a gas truck will get crappy millage

I read that the 7.3 was optional in any Excursion 2003 model??
I would walk on both. Right now there are MANY Excursions on the market , sure the prices are high on them for how old they are but they just don't make them anymore. Kind of hard to find something that has as much room and a #10k + towing capacity.
I'm a diesel guy and for the price and how much we use it , went for the V10 option. Picked a super clean one with 93k miles up earlier this summer for $10k. It had a lot of of the things that normally are need on these to safely tow already done. (rear sway bar, Timbren rear suspension, Aftermarket front hubs)
Also many say the 6.0 is fine after you change some things..I don't have much to say about that other than "change some things" for those that don't wrench can be up to $5k or more. I just have an issue with having to dump that into a motor that already should be reliable. All the diesels out there have one thing or another that needs to be addressed but the 6.0 seems to be the worst. Just my opinion.
All that being said, I love the Excursion. It's just too bad no one makes something comparable now.

Was just looking at a few of the V10's to tow my Corvette to the track. Seems to be a great pulling motor for a gasser.
Coming from a modded Cummins to the V10, it gets the job done. It doesn't tow anything near what the diesel did but it's not really that bad. My truck has 3.73 gears and stock size tires and it pulls our #7k toy hauler okay. It would be better with 4.30's. The V10 likes to be spun up not lugged.
The 2003 Ford F-Series pickup truck equipped with the 6.8L V10 engine received poor fuel mileage rating. Ford does not publish V10fuel millage data, but the Environmental Protect Agency pegs the V10 as earning no more than 11 city 14 mpg. highway and that 14mpg is empty and with out a trailer in tow.
Towing a 10k trailer and it will drop to 9mpg.
A diesel would be a much better choice.

Best vehicle I have ever used for long distance towing was my neighbors 7.3 Excursion... it was effortless going over the Cascades and I was impressed with the mileage and range.
He trades every 3 years because that is how much he tows for his business.
Owned all of the big tow rigs... some have had better performance and others luxury... none were as bare bones reliable and well suited to his towing as the 7.3 Excursion.
