I don't know about the different varieties. Burpee.com has reviews on their website that I found handy when looking for tomato seeds this year.
The one trick I know about growing carrots (except for the short ones) is to dig deep and plant them in soil that they can easily grow down into without hitting hard clay or rocks, etc. That will make them grow in weird shapes.
