How short should the grass be cut during winter? (growing, mower, spring)

Depends on where you live. If you live where the ground freezes you should leave it "high", but if not, I would still leave it at not less than 3", then next spring it will "green up" sooner if you cut it back to a couple inches then let it grow to the height you prefer. I like to keep mine about 3" all year long.
In our area, we cut shorter heading into the winter. It is not unusual for grass to be mowed less than 2" before winter. We have significant snow cover throughout most of the winter and long grass tends to be more susceptible to various snow molds.
