Does the census question specifically say "ancestry"? My permanent home is in NC, but I don't ever remember seeing the word "ancestry" on the census form. Might have had it, but I just don't remember. I would think most Americans, not just in the South, have no idea what their ancestry truly is. My ancestors same from England and Scotland in the early 1800's. I just know that from the research I've done and my grandfather's love of Genealogy. But my guess is that most Americans in general don't know what their exact ancestry is.
From my understanding of the 2010 census they didn't include ancestry as a question, I think they use the American Community Survey for ancestry. I think the 2000 census map, for all its faults, is the most accurate.
