That seems like the most logical interstate route. There is not much chance of avoiding steep grades when crossing the Rocky mountains. Also when the OP reaches the east they will have to deal with grades in the Appalachians as well, not as bad as the Rockies but some significant grades anyhow. If the vehicle is not capable of climbing grades then maybe it should be checked out by a mechanic to find out why. Crossing the continent with a vehicle with those kinds of issues would concern me.
