So we have this clog somewhere further down in our kitchen sink pipes. I attempted using one of those drain bladders (small size), and unfortunately not only is the clog still there but the bladder is stuck. It will not budge, anyone ever in similar circumstances find a way to get theirs out? Or am I stuck just cutting the pipes?

Odds are the pipe is loaded up with other crap as well.
The question is how much pipe you should cut out.

Did you try disconnecting the hose from the faucet. The blockage might be causing the bladder to not deflate.

I'd try the recommendation to disconnect the faucet to see if that will deflate the bladder.

If that doesn't work, I'd snake from the outdoor clean-out before I started cutting plumbing.

Normally, you don't use the bladder to push out the blockage. You just use it to shoot pressurized water, and don't stick the bladder all that far into the pipe.

In case some other reader hasn't used one before, you need help to block all the drain outlets on the same drain line so the built-up pressure doesn't just shoot back out at the sink or other drain cover. Any time we've used a bladder, it is done through the vent, not put into the actual drain. They can work really well.

Put a vacuum pump on the hose to collapse the bladder

Yes, hose is already disconnected from the water valve so there is no more pressure. The bladder itself should be deflated since there is no more water going into it, but your right the blockage could be preventing deflation at this point.
