Is there much of a demand for gunsmiths in the Knoxville area? I'm not talking about gun dealers, I'm talking about people capable of customizing a firearm, or repairing the intricate innards.

Is there a market for that sort of skillset, even part-time (well, especially part-time, all things given)?

Excellent. My retirement hobby might pay for itself, then. Not that I'm planning on opening a full service shop, by any means. I'm thinking small workshop with a concrete & steel walk-in vault for storage (some kind of safe is required by law to obtain the FFL), run it part time from behind the garage (no live fire, except for a simple bullet trap, so no noise or danger to possible neighbors, and no violation of zoning laws), one simple sign with no words. Something like a picture of a Winchester 30-30 crossed with the universal symbol for repair, a wrench. ;p
