I lived in Vegas ten years and never had that pizza until I came to the St. Louis area. I still haven't gotten used to Provel but learned you can ask for mozzeralla.

Is that the only difference? Provel cheese?

I've never heard of St. Louis style pizza either.

It's a love hate type of thing...

St. Louis-style pizza is a distinct style of pizza popular in St. Louis, Missouri and surrounding areas. The definitive characteristics of St. Louis-style pizza are a super-thin yeast-less crust, the common (but not mandatory) use of Provel processed cheese, and pizzas cut into squares or rectangles instead of large pie shaped slices. Provel is a trademark for three cheeses fused to form one (provolone, swiss, and white cheddar), used instead of (or, rarely, in addition to) the mozzarella or provolone common to other styles of pizza.[1][2][3] Provel cheese was developed by the St. Louis firm Costa Grocery in the 1950s[citation needed] and is made in Wisconsin primarily for the St. Louis market. The cheese is not widely available outside the St. Louis-area.[4]

I say try Aurelio's pizza located in Summerlin on Cheyenne. They cut their pizza into squares and it's the best pizza(IMO) in all of Vegas or midwest. Maybe not exactly what you're looking for, but you won't be disappointed.

Some pizza places in Chicago (my home town) do put slices of sharp provolone on top of the already melted mozz chz. But next time I am in St Louis I will have to check that out. You have now made me hungry.

Default Imo's Pizza

Go to www.stlpizza.com and you can order it frozen so you can cook it at home. I am going to do this too. I miss it since I moved to Florida 6 years ago. When I go visit the first thing I get is Imo's, then Lions choice, then jack in the box. It's hard to leave it. I havn't found a good pizza in Florida yet.

Vegas has Jack in the Box. Imo's Pizza--only the locals...I've live in MO for a year now, still not been to Lion's Choice. I do like the toasted ravioli though...
