I make mine at a local Ralph's. It's not bad -- there are approximately 25 items from which to choose.
There are a few more noodly things than I care for, but for low carb there are various types of chicken as well as ham, crab meat, crab meat mix stuff, hard boiled eggs, and cheeses, though some days they don't have the cheese cubes and so it's feta or nothing. I give it an A-/B+ because there should be a few more low carb options.

Can anybody recommend anything better?

Those salad bar things look good but I avoid them. Too many people sneezing on them and putting fingers in them (kids).

What are people putting in salads that would be high carb? Fried chicken? Bread? Pasta? I think salads by default are low carb. Salad bars are a rip off. It costs at least $10-20 to make a salad that would fill me up where as I can spend $10 on individual ingredients and get at least 3 servings

Maybe beans, & definitely the pasta salads.
However I also make salads at home, a bag of spinach will last a long time & make plenty salads, we usually have cheese on hand to add to salads & other meals too, & we always have fresh tomatoes to add etc. I would never buy a salad from the salad bar unless I was short on time, as it is an expensive way to go. But I can see the appeal of it to a busy person.

Crutons, noodles, and beans. Next time you're at a place that sells pre-packed salads such as TJ's, check out the carb counts on the packages.
