My mother has a hankering for making sausages, but she is having trouble finding the casings. Someone told us that they have them at the Schnucks on Whitten Road. Is this true? Do other places have them?

Or you can ask a farmer/hog raiser to save the pig intestines and use them as casings. Or is that too old school?

Well, we bought the casings (at Schuck's) and we bought the ground pork and we made the sausages. This first attempt wasn't very successful. The sausages were very dry. We were trying to re-create the wonderful sausages that my grandfather made. We did everything wrong. We should have used more caraway seeds and less mace. We didn't used enough water. The meat should have been less lean (more fatty). We should have had it ground more finely. My grandfather used to grind his meat twice. We will keep experimenting.
