Wow, many of my favorites have already been mentioned.
Always liked The French Connection, though some of the film feels dated now.
I am especially impressed with golfgod's mention of the chariot chase in A Funny Thing Happened On the Way to the Forum.
Another favorite of mine is the Jedi (bike) aerial chase scene in the forest.
Further: the Back to the Future II hoverboard chase scene, and the Back to the Future III train chase.
And I might get reamed out for this, but I kinda liked Angelina Jolie/James McAvoy in the Wanted (http://www.videograter.com/video/Wanted-Car-Chase-Scene - broken link) chase scene.

But if you say "chase scene" and not "car chase," then it has to go to THE INCREDIBLES. The bad guys in their blade saucers chasing the two kids was absolutely thrilling. If you can sit through that scene without a big ol' grin on your face, your heart has gone cold.
