Or write both at the same time? I can't really write lyrics but I can come up with the riff/melody easily. Then I try to attach some words to it depending on the mood of the piece of music I wrote.

I always write the guitar first.

Not just the "guitar".....guitar 1, 2 AND even 3 sometimes.

I used to use the original GP and I did it like you said, multiple guitars and other instruments. I just never wrote lyrics for 6-7 tunes that I wrote.

I wrote the lyrics and someone else wrote the music. Just for myself, I had a difficult time putting the words to the music and left it up to him to put the music to the words. I could offer him a beat by banging drumsticks on a brick or a table.

I get little pieces of melody in my head, could be anything, a verse, some catchy lyrics, a guitar riff. Throw it around for a while and see what happens. No concrete step-by-step process. Some of my favorite guitar parts came from playing around with a ukulele, so don't discount anything in search of a great melody
As a guitarist, what I have to watch for, is writing 'guitar' music. Thats cool to the 3 guitar players in your audience, but 98% of all other people who hear a song like it for the melody, which is usually vocals related. Studying great pop songs from the golden era ~ AM radio from the 60's and 70's~ is a lesson in great songwriting. How to do a lot with a little.
