We need to be in NYC on the Saturday after Thankgiving. We typically park at Seacacus Junction but given the Saturday after Thankgiving is a huge shopping day am concerned it'll fill up. We need to be in NYC by 12:30 and usually get to Seacacus around 10:30 a.m.
Other option is Metropark/Hamilton but we really prefer Seacacus (much less backtracking). I see you can reserve a spot via Edison's website but have no idea how that works since it's a come-as-you-are lot.
I think you should be fine getting to Secaucus on Saturday morning but getting out could be a hassle. Typically that Sat morning is busy but not comparable to weekday. I dislike going to Secaucus because of the outrageous parking fee and I rather take NJT trains to another station.

Thanks! We may end up trying Metropark because it's much cheaper (we'll be parking overnight and coming back late Sunday evening). I just have this fear of Metropark being full. We had that happen on a weekend last June and couldn't find anywhere to park - ended up at Newark airport because the tunnel had a 220 minute delay. Ugh!
I took a Zipcar from the Secaucus parking lot last holiday and it was not full. This is the outdoor lot within walking distance to the station but to be honest I forgot if there is even a parking garage on site or not. I can't see this lot filling up on a weekend when commuters won't be there.
