When you go out for New Mexican food, you often get chips & salsa.

Sometimes the salsa is room temperature, sometimes it's cold.

How is it supposed to be?

Either one. I don't care, as long as it has a good flavor....and if it is picante on top of that, so much the better!!

I've noticed that in San Antonio and Houston many places serve their salsa hot (heated). Having grown up in NM, it takes some getting used to.

I am used to eating it chilled at home, because it is eaten so quickly after being taken out of the refrigerator, it never seems to make it to room temp.

Room temperature, with warm chips. That way, you get all of the flavors at their best. I think I'll get some now.
