I handle my mother's day to day affairs, whether it's her bills, ubers, car rentals, plane tickets, buying things for the house like food, furniture, appliances, etc. She zelles me the money for everything that she wants me to take care of. it ranges from 1500, 900, 800, 700, 600, 200, multiple times per statement, will this be counted as income, as I was asked to submit documents.

Reimbursement is not income but you will have to explain each transaction. They may ask for documentation of the things you paid for for her. If they really want to be extra, they may ask for her to provide a notarized letter confirming the nature of the transactions.

Yep, document, document, document, and you should be fine. There's no rule against having lots of reimbursements, they just want to make sure it's not actual income.
