Short story.

My registration expired. There was a period of a few months when initially, I intended to renew within the following pay period of getting the notice in the mail but had forgot about it. As irresponsible as that is, that fact remains that my gf was stopped, and has to pay a fine and was given a court date which is actually this Friday. She figures she should plead guilty then pay the fine. Her theory is that they won't increase my insurance and being this is her first real traffic violation, she won't get her license revoked or suspended as well

Since she's gotten caught, I've jumped on that and renewed my registration and now I come to the community for a weigh in of opinions/ expertise on wether her theory is sound.

If you've straightened out your registration they should drop the charges. She just need to call the clerk of court and find out when the assistant DA is available for traffic tickets. If she brings in documentation that things have been taken care of, the ADA will generally drop the ticket.
