Maybe Eckley Miner's Village and/or the Yuengling Brewery in Pottsville might be of interest.

I don't know what lodging/dining to recommend but Google or others here can suggest something if this sounds interesting, depending on your preferences/itinerary.

In this general area, I'd take local roads off the Interstate and drive through some small towns between stops for some 'perspective'. You never know what you'll 'find'.

Lake Harmony is nice but you will be in and out in about 5 minutes so not too much exploration. Jim Thorpe is a no brainer. how about Eaglesmere. I've never been there but a client of mine was telling me about it the other day and it sounded like a great place, lots of history similar to jim thorpe! I think it's around the Ricketts glen area, west of the Poconos!

Well, if we're going that far afield, Ricketts Glen is WONDERFUL. Ricketts Glen and Presque Isle (Lake Erie, too far for you) are my favorite state parks in Pa. Ricketts Glen would be no good for your elderly person, though, Caladium, as it's a steep trail up and down ~23 waterfalls. But it is worlds better than Bushkill Falls (and free). Eaglesmere is a nice level hike around a lake. Don't recall much else about it, other than the really nice homes. I wouldn't go out of my way to see it, but again, I don't recall much ...

But Ricketts Glen, ahhh, that place is God's country. God's waterpark, so to speak.
