Does anyone have any helpful information that might help us in our planning? We also would like a venue that will allow the use of fire in the celebration as well as using our own choice of caterer. Any information would be greatly appreciated!!!

My thoughts exactly. The second you invite more than 100 or so folks, you're guaranteed to pay a lot. The average wedding ends up costing around $100 per guest when it's all said and done, so I hope by "affordable" you mean in the $50k range.

I agree that a wedding for 400-500 AND being affordable is quite the task and probably an oxymoron. However, I think the "waste of money" comment is a little harsh. The OP can spend their money on whatever they wish, especially their wedding, but I think having realistic expectations about what's available and at what cost would probably help.
type of venue? (i.e., outdoor, inside, ceremony + reception, seating, rural, urban, modern, traditional)
budget for ceremony and/or reception?
preferred location in the triangle area?
400-500 is a lot of guests which may limit some of your choices in the "budget" category.
Although affordable is subject I assume you meant in terms of the number of people. For example the Washington-Duke can accommodate that number but is obviously pricey, whereas somewhere like the Durham Convention Center or the Durham Armory which can also hold the number of guests you need is cheaper compared to Washington-Duke. Someone else has mentioned Connections Event Center (http://www.raleighmeetingspace.com/index.htm) quite a bit here so maybe look into that.

You can filter the minimum seating and choice of caterer. Although you will probably have to call about the using fire.
Granted I wouldn't even want 50 people at my wedding , weddings with that many people aren't exactly unheard of in many places so I am not sure why some posters are choosing to pose such rude and unhelpful comments.
If I were the OP, I'd be looking for non-traditional spaces that could work. The biggest obstacle is probably going to be the use of fire. Assembly sized crowds indoors and fire don't go hand in hand when vlewed by fire marshals and code authority.
