I just had to brag about this recipe I found - IT'S FANTASTIC. I didn't have any walnuts, or I would have thrown a few in there - the recipe seems very adaptable. I followed it pretty closely but added 1/4 cup of chia seeds AND 2 tbs rather than just the two tbs, and I cut the flour down by 1/4 a cup. I used whole wheat flour and it was fine - not too heavy. I also added a few chocolate chips - which made it divine.
Very healthy - greek yogurt, coconut oil, fresh bananas, strawberries (I had to use frozen this time of year), coconut, chia seeds, whole wheat flour, brown sugar. It's super easy to make.
Note - mine took a full 65 minutes to bake. The recipe says 50-65 minutes. It's fabulous!
Here's a picture of my finished product, right before I ate the best part - the crusty, crunchy and yet still moist heel of the loaf! (yes, with butter)

Yes, you can use coconut flour with this recipe. Someone asked that in the comments on the link I sent.
It's a dense bread but it's DELICIOUS. Filling and healthy. I had one slice for breakfast and I'm very satisfied. It's a moist, heavy bread but that's not a bad thing in this case.
It looks quite tasty! I don't do much baking but if this was put in front of me, I would definitely try it - not that fond of coconut.
Coconut flour doesn't really taste coconutty, so give it a try. But when I use it, it sucks up liquid like crazy so you can't really use the same measurements equally as flour.
