I just chop them and taste. If not sweet enough, I sprinkle a touch of sugar and stir through. Typically thawed berries are wet /soft and ready to use for me so not much needs to be done.
I would place them in a saucepan, add some sugar, some cornstarch and a splash of lemon juice or orange juice. Heat until thickened, then cool and store in the fridge until ready to use.
Of course the proportions will vary according to how much liquid is in the strawberries. If you're talking about a bag of frozen strawberries, it would probably be about 1 T. of corn starch and about 1/4 c. of sugar.
