Any time we went to Daphne's we always got the lemon chicken soup, it is da bomb.

I ended up making my own at home because Daphne's has gotten ridiculous with their prices. It is a fast food restaurant but they charge in the range of a PF Chang's, I say no way.

I made my usual chicken soup from the remains of a rotisserie chicken a few days ago. For some reason it wasn't that tasty this time, so the next day I threw in a package of cauliflower soup mix with a cup of milk and 3 cups of water. It turned out to be one of best chicken soups I've made on the fly.

Default Chicken soup with dumplings

Soup
chicken soup stock (boil a carcass)
chicken bite sized pieces, cooked
2 pieces celery, chopped
1/4 red pepper
1/2 cup chopped carrots
parsley, garlic powder, sage
Simmer until vegetables are tender

Dumplings
2 RAW chicken breasts, cut into 1 inch pieces
1 egg and 1 yolk
1/4- 1/2 cup cream or milk
6 slices diet bread, crusts removed, cut into 1 inch pieces
Mix all together in a bowl, then whir in blender a bit at a time
until all is blended into a thick paste. If it's too thin, add more bread or some flour.
Drop SMALL teaspoons into boiling soup and cook 3-5 minutes

I love avgolemono soup, but when I make it at home, I usually use orzo instead of rice. Try it - you might like it!

But, frankly, I wouldn't waste a whole chicken on this. A good quality, store bought or homemade from bones chicken stock works just fine. A whole chicken and carrots and celery might end up as a chowder in my house. Chicken corn chowder or chicken poblano chowder.
