if you do tell me about a few recipes that were good using broth. It sounds like a quick way for a good meal.

You can add some cooked meat or some frozen veg to it. Or noodles.

Brown some stew meat in oil and butter (a tablespoon of each) remove meat from pot and add a cut up onion or two. Brown onions. Add a cut up garlic clove. Return meat to pot. Add salt and pepper to taste. Add some cut up carrots and hot beef broth. Simmer 10 minutes or so, then add some cut up potatoes and simmer 10-20 minutes more, till potatoes are cooked.


Sub out potatoes for noodles or rice, barley and lentils if you want. (about 1/4 cup of each -rice, barley and lentils. Wash these grains before adding to your stew by rubbing and rinsing several times in water then draining water away)


Make sure you have enough broth so your end result is liquid enough to be stew like instead of just mush. I reckon about three potatoes or the 1/4 cup each of the grains would call for about five to six cups of broth. Noodles, I don't know, never used them, but maybe 1/4 pound raw. Remember, noodles are going to suck up your broth.


This will taste even better the next day. You could also add some mushrooms and a can of cut up tomatoes.

If I have it in the pantry, I'll use chicken stock or broth instead of tap water for making the chicken-flavor of ramen noodles. I also add chopped up white meat chicken to the pot. The result is a very decent bowl of soup made in less than ten minutes. I bit of Cilantro should make it quite decent.

Most large supermarkets these days sell leftover rotisserie chicken meat in a cold case near deli counters. I've found it at Kroger stores, Safeway and Sprouts. The Kroger outlet here in the Phoenix area (Fry's) sell some chopped up stuff that looks like it was mechanically stripped from the bones and came from a central kitchen; but I don't know for sure though that's what I gather from the appearance. Once I bought the stuff at Fry's and it seems a bit opaque or undercooked. Safeway is much better but my fave is at Sprouts as you get the whole big chunks of breast meat which we use for salads and soups. You have to be careful with this chicken meat as I've found parts of the wishbone in the product from all stores...

I like Trader Joe's Harvest Grain Blend (not a lot, just a sprinkle) simmered in vegetable broth, add frozen vegetables and diced leftover chicken. Yummy.

Tortellini soup:


3 cups chicken broth or stock
2 bags frozen cheese tortellini
1 cups diced carrots
1/2 cup diced onion
1 bay leaf
salt and pepper to taste
1 clove fresh garlic minced.
2 Tbsp. olive oil


Sauté vegetables in olive oil until tender.Add Chicken broth or stock. Bring to a boil, then add tortellini. Cook until tortellini floats to the top of the pot and is cooked until tender but not mushy.
