That looks like it would half really easily/well, the hardest part being adding the chicken stock to the roux (just the small volume, maybe it's an issue I have and not a problem for others).
IMHO, soups are about the most forgiving of items to cook. The biggest issue is over-cooking veggies, no one (with teeth) likes mushy veggies.

Agree--this looks like a recipe that can be easily halved.
I love making soups--with enough veggies (and whole grains like rice or barley), they can be a complete meal by themselves.
Wouldn't that kind of soup freeze well? If so, make the full recipe and freeze the leftover in individual portions, thaw, and reheat, stirring to prevent curdling.
If left to my own devices, I'd live on soups, stews, and chili.
