Any fans out there of baking with spelt flour... sprouted or not?

While I've heard mention of it I don't believe I've ever eaten anything made of it. How does it differ from 'regular' flour in both usage and taste?

"I'll have to look to see if any of the local markets carry it."....I get mine here Azure Standard, delivered to my area once a month...they deliver to most areas monthly, or will mail. I find it most economical to pick up my order at a distribution point, rather than having it shipped via US mail.

I like spelt sourdough bread. My stomach seems to handle it better than other breads. However, it was a *beep* to make the the first sourdough starter for it. Worth it, but still....
