My friend basically uses this recipe but replaces cottage cheese with cream cheese, and uses canned fruit salad, fresh banana slices, and nuts. It's garbagy but good, if you know what I mean. I eat way too much of this stuff when she brings it for pot lucks!
It sounds good! My brother remembers pineapple in it somewhere.
This looks easy to make, and I could do a few minor adjustments to make it like what I'm looking for. Thx.
ETA: I have searched all over the net, variations can be found, but I was hoping maybe I'd find the 'one'

This was my favorite thing my grandma made us in the 80s and 90s
"Strawberry Mold"
1 pkg of strawberry flavoured gelatin, 1 cup boiling water, 1 10 oz pkg of frozen strawberries, 1 4oz pkg cream cheese, crushed walnuts.
Dissolve gelatin in boiling water.
Drain liquids from strawberries. Chill in frig until slightly thickened.
In the meantime, soften cream cheese & shape into balls. Roll in crushed walnuts & add to thickened gelatin.
2 packages cream cheese (8 0z.)
2 Tbsp. Mayo
2 Tbsp. sugar
1 can whole cranberries
1/2 pt. Heavy cream whipped
1 can crushed pineapple drained
1/2 cup chopped walnuts (you can leave them out if there are nut allergies in the family)
2 small aluminum loaf pans
With an electric mixer, blend first 3 ingredients. Add fruit and nuts. Fold in whipped cream. Pour into 2 small loaf pans. Cover with foil and freeze. To serve remove from freezer, pull sides away from pan. Allow to stand for a few minutes, shake out the mold onto a nice plate.
This would be a good spread for bagels or any homemade bread, even crackers.
I am looking for a jello recipe my Mother used to always make for the holidays.
It was strawberry jello, with frozen strawberries, cream cheese and walnuts.
It seemed to be all blended, not layered, but in a casserole dish...9x13.
I've been searching and searching thru all her old recipe books and a giant folder I have of her family faves..
The thing is, I made this abt 8-10 yrs ago for my brother, and now I can't find the dang recipe!
You know how you try to envision it and try to see where it was and what it looked like, ya well,,, that's not
working anymore...lol
I need some helpppp.
My mom in law used to make a yummy one for the holidays. She called it rain bow salad i think. It was a package of green jello: a filling of cream cheese, fruit cocktail and nuts and maybe something more in the middle layer and then a package of red jello. I did substitute some other fruit for the fruit cocktail.
