Looking for a new twist, on cold salads, healthy dressings. So tired, of the same old pasta, or chef salads. Need dishes, that we just come home, in 90 degree weather, open the fridge....and there it is ready. I know I can use a crock pot, but looking for dinners, that are cold, light and healthy.

We use leftover chicken to make chicken salad. Sandwich optional.

Hubby loves potato salad; I helped him learn to make it in the pressure cooker, steaming spuds and eggs at the same time. Add a cold rotisserie chicken or other meat if desired.

Both can be ready in advance.

Pineapple Mango Salsa Chicken Lettuce Wraps are delicious and satisfying. I use a store-bought rotisserie chicken and shred the breast meat. I sometimes add some sliced avocado also.

I could be perfectly content with a charcuterie board with a few types of meat and yummy cheeses, olives, tomatoes, etc. Maybe some naan bread or crackers. Even better with some gazpacho on the side.

Thai or Vietnamese salads. On top of cold noodles or lettuce.

BTW several of these call for thai basil. It's very easy to grow - as easy as regular Italian basil. Mint is super easy to grow, but I strongly suggest growing it in a pot. It's like an invasive weed.

Some 'cooks' will say you can sub thai basil with Italian basil. Don't. Just leave it out if you can't get thai basil.

Yes, cold cuts would be great....if it wasn`t for that darn high cholesterol.

Sounds sooo good, but not to healthy. Have to watch my numbers.
