if you went out with a girl for a long time before getting married, like 5 years, and celebrated an anniversary every year of when you started dating do u stop that after getting married and switch it to the marriage date?

Yes, if only for clarity's sake. Your first anniversary is a year after you got married. You don't get married and a month later tell everyone it's your fifth anniversary. Nobody really cares but the two of you how long you dated anyway.

My wife and I dated for five years and we still celebrate many anniversaries such as our first love making, when we first met and our first vacation as a couple. You can't forget those wonderful years even after you get married.
