Ok so I live in texas to start this off

I have my own apartment and i had a friend stay with me because she had no where else to go. February of this year she had sent me a text message and told me that she will have her stuff by the first of march. She never paid me February moth rent and her baby daddy (who is a good friend of mine) paid for January. On march 5th she showed up her at 11:30 pm with another guy and started banging on my door because i had the deadbolt lock.(she does have a key) It got so bad that i ended up calling the police. But not before i was yelling though the door "come back tomorrow morning because im not letting you in at this moment"

Since she had already left and it was only her stuff here along with the fact that she had never paid rent both months she was here. Do i need to have a formal eviction notice to kick her out considering she had moved out of her own choice and still kept my apartment key

What you did could be considered self help evictions and is illegal. She has legal possession until you evict OR she returns that possession to you, in most cases this means keys. The cops would tell you to let her enter if they showed up, they do not get involved in this stuff so unless there was threat of violence they would allow her back inside.

Christ. She's willing to leave on her own. Give her her crap and good riddance. Consider it a lesson learned. Sorry to say you will never see that money you are "owed". As for the key try to get it back. Unfortunately she could of made copies and passed them around like party favors. So you may need to tell your LL you need your locks changed. Pay the fee to either have the locks changed or keys redone by a Locksmith. If you never told your LL you had a unauthorized roommate well expect him to be at least a bit annoyed.

Her baby daddy is a friend of yours. Ask him to come get her stuff and take it to her.

Yes, actually, you do need a court order to get her out, but she has already moved on. If her "family" picks up her stuff, you are in the clear. You can't throw it out yourself, though.
